DIY- Scott’s Homemade Granola

What happens when an Urban Retro Fitter Mom encourages her kids to help out in the kitchen? Yummy goodness!

Teaching your kids to be comfortable in the kitchen and make food that is wholesome and nutritious is one of the best gifts a mom can pass along to her children before they start leaving the nest. They need to know some of the basics and starting with a great recipe and simple ingredients is a great way to start.

This is a recipe inspired by my great friend, Sue Gray , owner and creator of  Goodness Gray’s-cious Granola. It is one of our favorite and something our older kids who have already moved out of the house still make for themselves.

Trust me… I know…most of the time making something is easier and less messy when the mom does it herself, but kids need to spend time in the kitchen, measuring, mixing, baking. Life skills need to be taught.

Whether you live almonds, pumpkin seeds, cashews , mango, Craisins or dried pineapple, you can make something that you and your family will enjoy. Use what you have and create something amazing.

Make a memory ~ create together ~ teach your kids to cook!

 Scott’s Granola
Preheat oven to 325
Mix following ingredients into a large bowl:
3 cups rolled oats                                                         1/2 cup chopped walnuts
1/2 cup salted sunflower seeds                                 3/4 – 1 cup slivered almonds
3/4 cup shredded sweetened coconut                     1/4 cup flax seed
1 tsp. cinnamon

Measure into a microwaveable bowl and microwave for 1 minute :
1/4 cup canola oil                                                         3/4 cup honey
1 tsp. vanilla
Pour liquid over dry ingredients and stir until coated. Put onto parchment lined baking sheets and bake for 20 minutes or until golden brown.
Take out of oven and stir 3/4  to 1 cup of Craisins, raisins or chopped dried mango into granola.
Let cool. Put into airtight containers.
Sue said this can be stored for up to two weeks, but our granola never lasts that long. Perfect for cereal, to stir into yogurt or eat right out of a bag!
