Spicy Sweet Potato Fries
I have heard it said that dinner time is the arsenic hour, you either want to give it or take it! I totally believe that! When the kids were young, it didn’t matter what time I started dinner, there was going to some kind of melt down or mishap. I had to be on my toes when it came to meal planning. But now that the kids are older, I have become a bit more relaxed about meals. Too relaxed.
Despite getting food magazines and watching the Food Network, I sometimes come up short when it comes to creative meal plans or trying new recipes.
I had planned to throw some chicken breasts on the BBQ and remembered that we still had several sweet potatoes in the pantry. I love sweet potatoes, and usually think of fixing them at Easter or holiday meals, but then I remembered a recipe I saw on The Pioneer Woman blog for spicy sweet potato fries.
They were amazing.
I am not sure why I hadn’t fixed them sooner! I served them up with barbecued chicken and chilled watermelon cubes.
Tell me what you think!
Spicy Sweet Potato Fries
Ingredients
- 3-4 whole Sweet Potatoes -peeled and cut into thin sticks
- 1/2 stick Salted Butter
- 2 cloves Garlic – pressed
- 1 teaspoon sea salt
- 1 teaspoon Chili Powder
- 1/2 teaspoon Black Pepper
Preparation Instructions
Preheat the oven to 450 degrees.
Peel and cut Sweet Potatoes in thin sticks.
In a small sauce pan melt the butter. Add garlic, salt, chili powder, and black pepper. Whisk together.
Place sweet potatoes in a large bowl and drizzle butter/spice mix over top.Toss to coat evenly.
Arrange on two baking sheets and bake in the oven for 15 to 17 minutes, shaking the pans halfway through, until the fries are sizzling (watch so that the edges don’t burn).
Remove from the oven and allow to sit on the pan for a few minutes.
Note: Oven baked Spicy Sweet Potato Fries will not be overly crisp, but they should be firm…and, of course, yummy!
