Almond Strawberry Tea Cake ~ simple yet elegant!

In a time when life is moving a crazy speed, what would you do if you had a few unexpected hours in your day?

That happened to me. Today!

I thought I was going to work but there was a last minute schedule change and I had the whole afternoon off.

I could have done so many things that I feel I am behind on; writing projects, cleaning out my closet, organizing a mountain of papers. My list is endless. I am sure yours is as well.

But instead, I thought about the strawberries I had purchased for a cake. It almost seemed indulgent to use perfectly good daylight hours on baking a cake, but sometimes we need to just slow down, and sift through our thoughts. Plus, there is something wonderful that happens when you start to cream real butter, eggs, and sugar! And I knew these strawberries were not going to last too much longer.

This is a recipe that reminds me of our daughter-in-law, Aarika Seither. She has made this several times for us and every time I absolutely LOVE it. There isn’t any frosting, just simple ingredients.

Almond Strawberry Tea Cake..put the kettle on!

Ingredients
  

  • 1/2 cup salted butter - room temperature
  • 3 tablespoons sour cream
  • 2 eggs - room temperature
  • 1 cup granulated sugar
  • 2 teaspoon lemon juice
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla
  • 1 1/3 cup all-purpose flour
  • 2/3 cup almond flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 1/2 cup sliced strawberries
  • 1/2 cup sliced almonds

Instructions
 

  • Preheat oven to 350.
  • Rub butter or shortening on sides of pan and lightly dust with flour. Line the bottom with parchment paper.
  • Cream butter, eggs, sour cream until light and fluffy. Scrape bowl and mix again. Add lemon juice, almond extract, and vanilla.
  • Turn speed to low and add in the flour, almond flour, baking powder, and salt until just mixed.
  • Gently fold in strawberries with spoon.
  • Scoop batter into prepared cake pan.
  • Add almonds on top.
  • Bake for 40 minutes or until knife inserted in middle comes out clean.
  • Allow to cool before sprinkling with powdered sugar.
