Strawberry Shortcakes…YUM :~)

There is something tantalizing about fresh strawberry shortcakes. I am not sure if it is the buttery biscuit, the fresh strawberries or the creamy dollop of whipped cream that keeps it all together, but it is something I find myself unashamedly licking the crumbs off my fork every time I make it.

In “The Adventures of Pearley Monroe”,  Miss Nancy is always baking up something wonderful. She reminds me so much of what Great-Grandma Upton was like. I don’t think we ever went to her house that we  weren’t greeted at the door with the aroma of peach cobbler or pumpkin pies.

Baking and cooking wasn’t just a means of getting nutrition, it was the art of hospitality.

What is your fondest food memories that made you feel nurtured?  If you have favorite recipes, pass them on.

 Strawberry Shortcake

2 cups flour                                               2 tablespoons sugar

3 teaspoons baking powder                   1/2 teaspoons salt

1/3 cup  butter                                          1 beaten egg

1 teaspoon vanilla                                 2/3 cup whole milk

Preheat oven to 450.

Mix dry ingredients together, cut in butter until it is like course crumbs. Combine egg, milk and vanilla  in a separate bowl: add to dry ingredients and stir until soft dough forms.

Drop by large spoonfuls onto ungreased cookie sheets. Bake for 10 – 12 minutes.

Whipping cream : 1 cup whipping cream  – 4 – 6 tablespoons of powdered sugar or to taste.

Split and add sliced strawberries or peaches and whipping cream. Top  with more whipped cream and a strawberry.

Serve anywhere..anytime.. and preferable with a hot cup of freshly brewed coffee.
