Marshmallows from Scratch? Your Hot Cocoa will thank you!

Ingredients
  

  • 2 envelopes unflavored gelatin
  • 1 cup ice water divided
  • 1 1/4 cups sugar
  • 1 cup light corn syrup
  • 2 tsp. vanilla extract -or- 2 tsp peppermint or coconut extract.
  • powdered sugar for dusting

Method
 

  1. Generously dust baking sheet or 9 x 13 pan with powdered sugar.
  2. Sprinkle gelatin over 1/2 cup ice water in mixing bowl.
  3. Stir together remaining 1/2 cup water, sugar, corn syrup in medium sauce pan.Cook over medium heat until sugar is dissolved.
  4. Increase heat and cook until mixture reaches 240 degrees on candy thermometer.
  5. Using whisk attachment, with mixer running, slowly add hot sugar mix into gelatin.
  6. Beat on high for 10 minutes until thick and glossy.
  7. add in extract and whisk for 1 additional minute.
  8. Spread marshmallow mix onto prepared pan. Dust with powdered sugar.
  9. Let set for 8 hours at room temp.
  10. Cut into small squares and toss with powdered sugar until all sides are coated.
  11. Enjoy.
