PEACH Cobbler- Perfection!

Ingredients
- ~ FILLING ~
- 4 cups sliced peaches
- 1 cup granulated sugar
- 1 Tablespoon cornstarch
- 1 Tablespoon lemon juice
- ~ BATTER ~
- 1/2 cup butter ( one stick)
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1 Tablespoon baking powder
- 1 teaspoon cinnamon
- 1 pinch of salt
- 1 cup milk
- 1 teaspoon vanilla
Instructions
- Preheat the oven to 375 degrees.
- In a large saucepan, sift together sugar and cornstarch,
- Add peaches and lemon juice, stirring until dry ingredients are dissolved. Stir over medium heat until the mix begins to boil. Turn off the heat and set it aside.
- Place butter in a skillet or a large 10×10 oven-proof pan. Set in the oven to melt while you mix up the batter.
- In a medium mixing bowl, sift together flour, sugar, baking powder, cinnamon, and salt.
- Stir in milk and vanilla, DO NOT over stir. It will be clumpy! It is OK! Trust me on this.
- Pull the skillet with melted butter out of the oven. Pour batter into buttery pan. DO NOT STIR.
- Pour the peach mixture over the batter. DO NOT stir.
- Lightly dust with cinnamon.
- Bake until crust bubbles up, browns, and mostly covers peaches. 40-45 minutes.
- Serve warm with whipping cream or ice cream.
- So good you will want to have the rest for breakfast!
