Jump to recipe Cast Iron Skillet Peach Cobbler August 1, 2022 by Marci Cuisine Lakeside Retreat Homestyle Category Empty Nest: Strategies To Help Your Kids Take Flight RECIPE Persons 8 Serving Size 1 slices Ingredients ~ FILLING ~ 4 cups sliced peaches 1 cup granulated sugar 1 Tablespoon cornstarch 1 Tablespoon lemon juice ~ BATTER ~ 1/2 cup butter ( one stick) 1 cup all-purpose flour 3/4 cup granulated sugar 1 Tablespoon baking powder 1 teaspoon cinnamon 1 pinch of salt 1 cup milk 1 teaspoon vanilla Instructions Preheat the oven to 375 degrees. In a large saucepan, sift together sugar and cornstarch, Add peaches and lemon juice, stirring until dry ingredients are dissolved. Stir over medium heat until the mix begins to boil. Turn off the heat and set it aside. Place butter in a skillet or a large 10×10 oven-proof pan. Set in the oven to melt while you mix up the batter. In a medium mixing bowl, sift together flour, sugar, baking powder, cinnamon, and salt. Stir in milk and vanilla, DO NOT over stir. It will be clumpy! It is OK! Trust me on this. Pull the skillet with melted butter out of the oven. Pour batter into buttery pan. DO NOT STIR. Pour the peach mixture over the batter. DO NOT stir. Lightly dust with cinnamon. Bake until crust bubbles up, browns, and mostly covers peaches. 40-45 minutes. Serve warm with whipping cream or ice cream. So good you will want to have the rest for breakfast!
