The Sweet Taste of Summer!

I love the tastes of summer! Whether it is hamburgers being grilled, fresh corn salad, or a perfectly ripened watermelon. But one of my favorite all time recipes is the classic Strawberry Shortcake!

I am not sure if I love it because the sweet berries burst with flavor, the buttery shortcakes are topped with whipped cream, or because I can’t savor a serving without thinking of my grandmothers kitchen.

Because so many of my memories are tied around food and the hands that helped to create it I have decided to do something a bit out of my comfort zone. I am creating a recipe memoir! Yep..most likely you haven’t heard those two words stuck together before, but that is what I will be jumping into with both feet.

The Sweet Taste of Summer!

Ingredients

  • Summertime Strawberry Shortcakes
  • 2 - cups all-purpose flour
  • 2 - tablespoons sugar
  • 3 - teaspoons baking powder
  • ½ -teaspoon salt
  • ½ -teaspoon nutmeg
  • ½ -cup butter (1 cube)
  • 1 -beaten egg-at room temperature
  • ⅔ -half and half
  • 3 to 4 cups - sliced strawberries sprinkled with sugar
  • 1 -cup whipped cream -sweetened with powdered sugar..or use spray whipped cream or ice
  • cream. Hey, this is your dessert so make sure it is memorable!

Instructions

  1. Heat oven to 450.
  2. Sift dry ingredients into a bowl. Cut in butter until the mixture looks like a cross between split peas and rice. Whisk egg and half and half: add all at once to dry ingredients but only stir until it is moist. No need to overdue this or it will be like little bricks.
  3. Seriously-for all my OCD friends- it is OK to have it be lumpy:~D
  4. Turn dough out of lightly floured surface and knead gently a few times. Pat or roll to ½ inch thick. Cut biscuits with floured biscuit cutter-or-use a canning ring or drinking glass if you need to. It is biscuit making, not rocket science so you might need to be a bit creative.
  5. Bake on ungreased baking sheet for 10 minutes.
  6. Split shortcakes and fill with strawberries and whipped cream.
  7. Garnish top with extra whipped cream and strawberries.
  8. ENJOY!
